Orappam is a traditional snack made with parboiled rice. Both white and red rice can be used for this. Now a days fried rice flour is used. I want to try the old recipe so went for it.
Ingredients and Preparation
Parboiled white rice 2 cups, grated coconut 1cup, cooked rice 1 tbsp.,
grinded it smoothly to a dosa batter texture in a mixie. Kept the batter overnight to ferment.
Grated coconut 1 cup, coconut milk 1 cup, grated white jaggery 2 cups, dried ginger powder 1 tsp., cumin powder 1/2 tsp. and salt 1tsp.
Combine all these ingredients into the batter and mix well.
For Orappam coconut oil is used to prepare. Nuts and raisins can be used. Since it’s lockdown skipped these. Substituted with some cherries 🍒 Transfer the batter into a nonstick wok, Heat the mixture on medium flame. Stir continuously. When the volume comes to half, add 2 tbsp. coconut oil. Stir continuously, add 2 more tbsp. coconut oil. Stir till the mix gets separated from the sides of the wok. Drop in the cherries. Combine well. Oil a tray or a plate and transfer the contents into it. Moist your hands and level the surface or you can use the oiled bottom of a flat spoon to level. Allow to cool down for two hours. Upside down in a plate. Cut into your desirable shape. The grated coconut in it gives the crunchiness to the snack. Nice nostalgic memories flooded. Now a days this one is not so common.
