    Again with a kanjivellam Halwa. Last time I made with jaggery (gur). Posted in my blog sumarajsheathyrecipes.blogspot.com. In this lockdown period experiencing the goodness of the leftovers in the kitchen. No need to throw away or make food waste. It can be reused and remade into mouthwatering dishes.
    We cook rice in open fire. So get plenty of rice water. My husband loves to drink the diluted  rice water with salt to taste. We cook rice only twice in a week. Now I made a habit to have rice porridge (kanji) with fresh grated coconut and salt to taste on the day we cook rice. You can add a spoon of ghee in the kanji which enriches the taste. A vegetable side dish makes its a balanced diet. I use the rice starch water for grinding dosa, idli and appam batter. It is so good. In our case we are not wasting the  kanjivellam. The cold kanjivellam is a good shampoo. Can make a facial pack with moong dal and turmeric powder in it.

For a new recipe tried this halwa with sugar instead of jaggery (gur).
Ingredients
Kanjivellam 4 cups, I prefer matta (red) rice water,
cornflower 5tbsp.,
Milk 1 cup, ( dilute cornflour in the milk),
Sugar 1 cup,
Turmeric powder 1/3 tsp.,
Cardamom powder 1tsp.,
Salt a pinch,
Peanuts fried splits 2 tbsp., (cashew nuts or pistachios can be used)
Ghee 3tbsp.
Preparation
Combine the kanjivellam, cornflour milk, salt, cardamom and turmeric powder in a bowl. Sieve it into a nonstick wok to make sure that no lumps or residues are in. Put the wok on medium flame. Stir continuously. When the mix comes half of the volume add sugar, peanuts and 2 spoons of ghee. I was having 4 cashew nut splits which too was added. Stir well. Go on stirring. Again when it gets thicker add one spoon ghee. Stir until it gets separated from the sides of the wok and turns crumbled into a ball. Grease a plate with ghee. Transfer the mix into the plat. Spread it with the bottom of a ghee touch spoon. Allow to cool down. It takes an hour. Upside down it on a plate. Cut it into your desirable shape and size. Delicious snack with kanjivellam. So easy to cook. Your guests won’t be


able to identify the star ingredient in it. Try this next time. And please leave a comment.
