A special dish on my pirannal. Pineapple Semolina Kheer. On birthday cake cutting and pirannal a payasam or kheer. That’s the celebration 🥳 Love to try new recipes always. This pineapple was waiting here for the last four days. I had already posted pineapple pradhaman in this blog years before. So today decided for a trying kheer. Traditional Kheer is made of rice/ vermicelli, milk, sugar, ghee and dry fruits. I prefer Sago more than Semolina. Its lockdown, no sago in our pantry. Then decided to prepare whatever I have in my hands. This is a summer Special Kheer.
The anti inflammatory properties of pineapple help in keeping the digestive system healthy, aids in weight loss, and subsides body ailments.
Ingredients
Chopped pineapple pieces 4 cups,
Fried peanuts 1/4 cup,
Fried Semolina 1/2 cup,
Condensed milk 200g.,
Sugar 2 cups,( depends on the sweetness of the pineapple),
Cashew nuts 12, split them,
Dried ginger powder 1 tsp., salt a pinch,
Cardamom powder 1 tsp.,
Ghee 3 tbsp.
Preparation
In a mixie, blend the peanuts and 3 cups of the pineapple. In a pressure cooker, cook the blended and chopped pineapple for 5 whistles. Allow to cool down.
Open the pressure cooker and on medium flame cook it to absorb the water in it. Add a cup of sugar and a tbsp. of ghee, mix well and let the mix become moist dry. Keep it aside to cool down. By the time put the Semolina in a nonstick wok along with six cups of water and cook on medium flame. Add the balance sugar, salt, cardamom and dried ginger powder, cook till it comes thick. Add the condensed milk, mix well. Stir continuously, may add boiling water if it’s getting thick. Allow to cool down. Now fry the cashew nuts in the balance ghee. When the Semolina is warm, add the pineapple mix, combine well. The nice colour , delicious flavour and fruity texture tempts you to have it. Wait, please pour the garnished cashew nuts over the Kheer. Now ready to serve.
