Aamras poori 




Mangoes almost coming to an end this season. We can’t see mangoes in the tree. Summer showers are strong now. Every morning getting few mangoes under the tree. Two weeks before when I got some, I posted the pic of mangoes in the whatsapp for new recipe. Got some new. Prepared sweet and spicy salad, sweet mango curry along with our traditional mango dishes. The one shared by my friend from Pune Ms Geetha Unni is interesting which is not common in Kerala. Waited for a good number of mangoes. Today came the day.
Aamras Poori for breakfast. So simple and easy to prepare. Aam means mango and ras means juice. It is mango pulp. It is a common and festive dish in Maharashtra, Gujarat and Rajasthan. Slight difference in flavour only. Cardamom, dried ginger powder, saffron like that it’s varies from States. 
We used to like a savoury side dish for puri and chapatti. It proved sweet can easily go with puri. It takes us to another level of taste. Oh it’s super delicious.
Sweet and fleshy mangoes are good for aamras. If not sweet and you prefer sweetness you have to add sugar. I gave a new flavour in the recipe. Added ginger and green chilli for a slight spicy twist.
Preparation 
Wash the mangoes. Allow to dry or wipe it with kitchen tissue. Peel them, cut into pieces and put in a blender. Add chopped ginger as much as you prefer. I add 2 tsp. chopped ginger, 2 green chilli and a pinch of salt. No need to add milk or water. Thick pulp is the best to taste. Blend it smooth, transfer into the serving bowl and garnish with fresh green chilli slices. That’s it. Prepare puri with whole wheat flour in coconut oil. Serve the puri hot with gently chilled aamras. Heavenly taste, amazing flavour, proud  to serve a totally new dish to my beloved ❤️
