Amaranth flour Dosa ( Pan cake)


A dinner special. ‘Amaranth flour dosa with Sambar’.
We are now in USA with our daughter. Found this precious amaranth flour in her pantry. She told me to try it as a substitute of rice flour and make whatever you want.
After making amaranth flour puttu I got inspired to make more dishes with it. It is easily digestible. Whole grain Amaranth flour is rich in protein and dietary fibre. So it’s a great way to enhance the protein in dosa by substituting amaranth flour instead of rice.
Ingredients
Urd dal powder 1 cup,
Amaranth powder 2 cups,
Methi (fenugreek) powder 1 tsp.,
Salt to taste
Mix the ingredients in a bowl add four cups of water, combine together and grind it for two minutes in a mixer grinder. Please add more water if needed to make the batter semi thick for dosa. Keep it for 8 to 10 hours to ferment.
Heat the dosa pan on medium flame. Take a ladle full of batter, pour on the pan and spread it thin and round. Allow to light brown and flip it to cook the other side. Serve hot with Sambar or Chutney.

Amaranth flour steam cake ( Puttu)

This is the first time I am preparing puttu with amaranth flour. Usually we prepare rice, wheat and ragi puttu. Also I had made oats, corn, jack fruit seed , and semolina puttu. Here in San Antonio in our daughter’s pantry found amaranth flour. She told me you can use it as a substitute for rice flour. So I made puttu out of amaranth flour for dinner and it came out so good 😊 
Amaranth flour is gluten free and rich in protein, fibre and contains good source of health promoting antioxidants. It has vitamins B and E and also micronutrients of manganese, phosphorus, magnesium, potassium, zinc and iron. 
How to make the Amaranth flour Puttu 
Amaranth seed flour a cup, salt to taste, water to moist the flour to cook. 
Take the flour in a bowl, add salt, sprinkle water and moist the flour in a wet powder form.
Grated coconut a cup, take the puttu maker, fill quarter portion of the bowl with water and allow to boil. Take the puttu cylinder put 2tbsp. grated coconut followed by 6 tbsp. amaranth moist flour, then coconut, flour like that fill it and put on the bowl, allow to steam cook. When the steam is coming out nicely, take the puttu cylinder out and push out the puttu on a plate. For breakfast I prefer puttu to have with chickpea curry or banana and if for dinner I like to have it with chicken or goat curry.

Boiled Mussels

We, me and my husband love mussels. This is the dish I got inspired from Poh’s kitchen. My grandson in Australia loves this and so I became a fan of mussels. Here USA our grandsons like it. Weekend shopping saw the mussels and bought a pound. The recipe is so easy to make.
 Shallots 2, garlic cloves 2, ginger 1 inch, spring onion sprigs 3, all finely chopped, salt to taste, coconut oil 1 tbsp.
Heat oil in a shallow pan, drop in all the ingredients except spring onion, sauté it till tender, drop in washed and cleaned mussels in and cook till done. 
It’s optional to add crushed red chillies and lemon juice for your taste. Add chopped spring onion, mix well and transfer into a serving bowl and serve hot with veggie salads and bread or bun.

Boiled Egg Fry....A good snack

It is easy to make this for guests and they will surely going to like it.

I made this dish as an appetiser for a dinner in San Antonio. It’s not at all spicy so everyone can enjoy the dish.
Egg 12, hard boiled. Allow to cool down, peel off and just fork in here and there. Keep them aside.
Coconut oil 1 tbsp., pepper powder 1/2 tsp., turmeric powder a pinch, ginger garlic paste 1 tsp., capsicum 1, thinly sliced and salt to taste. Spring onion ribbons to garnish.
Heat the oil in a shallow wok, drop in the eggs, ginger garlic paste and salt. Combine the ingredients. Then roll the eggs to light brown all around. Take the eggs out and keep on a dry plate layered with tissue paper. In the balance oil drop in the capsicum slices, sprinkle salt to taste along with pepper powder and sauté. Take it out in a plate. Now cut the eggs in halves. Place the cut end down in the wok and let it fry for a minute in low flame. Transfer the eggs with cut end up in a serving tray and garnish with capsicum and spring onion. It is really delicious 😋

Spinach and Garbanzos


 In connection with our Spanish theme fiesta dinner group the dish assigned to us was spinach and garbanzos. The name seems tough the recipe is so simple. The main ingredient is our chickpeas.
Ingredients
Chickpeas 1 cup, soaked overnight and cooked.
Spinach 1lb., chopped roughly
Onion 1 medium, chopped
Extra virgin olive oil 2 tbsp.,
Tomato sauce 1 cup,
Spanish paprika powder 1tsp.,
Salt to taste
Heat oil in a shallow pan, drop in onion, sauté till tender, add spinach, mix well and allow to wither add the cooked chickpeas and salt to taste, mix well and add the paprika powder and tomato sauce, bring the flame to low and allow to bubble up. Adjust salt. Transfer into a serving bowl and serve with rice or bread. Can have it with salads too. Really yummy 😋

Mouth watering Spanish dishes



Sharing the beautiful and delicious experience of Spanish dishes I enjoyed in our fiesta dinner group. Being the first time to taste Spanish food I was really excited to see what will be the dishes coming in. The food was Gazpacko (soup), salads, bread, seafood paella, tortilla espanola, spinach garbanzos, Spanish chicken rice, fish fry, different type rices, lamb dish were the main dishes. I was really wondered to see that it was so delicious to my taste. Of course for me Seafood Paella was the star. The shrimp, clams, scallops and mussels were perfectly decorated that each spoon gets all the seafood in it. The chicken rice and tortilla espanola took the second and third place in my rating. It’s easy to cook the dishes in our kitchen provided you should have the passion for cooking. So why to wait, go google and get ready to surprise your family with a delicious Spanish dinner on a Saturday evening. Seafood Paella 




Red lobster 🦞 dining experience ❤️




During our visit to San Antonio every time we love to dine in Red Lobster restaurant which is so delicious and an awesome experience. For the last ten years we are doing it.This time we went there and as usual we waited for twenty minutes even after booking. We love seafood and can cherish the freshness in the seafood served. All of us love to dine at Red Lobster. The rush in the restaurant shows the quality of the food served. My all time favourite dish is the ‘ultimate feast’ with lobster tail, snow crab legs, garlic shrimp, rice and salad with the delicious butter dip. The cheddar bay biscuits are so delicious. The clam soup and mussels are great appetisers.Those who have shell fish allergy are having other options of fish, chicken and steak along with pasta and pizza to satisfy the kids. Founded in 1968 in Lake land Florida is a casual dining restaurant now with headquarters in SF California. Sharing our delicious experience with Red Lobster with my beautiful readers.
