Ingredients
Chickpeas 1 cup, soaked overnight and cooked.
Spinach 1lb., chopped roughly
Onion 1 medium, chopped
Extra virgin olive oil 2 tbsp.,
Tomato sauce 1 cup,
Spanish paprika powder 1tsp.,
Salt to taste
Heat oil in a shallow pan, drop in onion, sauté till tender, add spinach, mix well and allow to wither add the cooked chickpeas and salt to taste, mix well and add the paprika powder and tomato sauce, bring the flame to low and allow to bubble up. Adjust salt. Transfer into a serving bowl and serve with rice or bread. Can have it with salads too. Really yummy 😋
