Thought to have take away lunch from home. Decided to cook rice with the leftover veggies and eggs. </div><div class="separator" style="clear: both; text-align: center;">Basmati rice 1 cup, cooked in 21/2 cups of water with salt to taste, transfer the cooked rice into a wide bowl, run a fork through it and allow to cool down.</div><div class="separator" style="clear: both; text-align: center;">Ivy gourd two handfuls, washed and sliced thinly,</div><div class="separator" style="clear: both; text-align: center;">Onion 1, garlic cloves 7, ginger 2 inch piece, green chilli 4, all thinly sliced,</div><div class="separator" style="clear: both; text-align: center;">Eggs 2, butter 25 g,</div><div class="separator" style="clear: both; text-align: center;">Salt to taste and curry leaf 3 sprigs.</div><div class="separator" style="clear: both; text-align: center;">Turmeric powder 1/2 tsp.</div><div class="separator" style="clear: both; text-align: center;">Heat the butter in a shallow pan, drop in curry leaves, followed by onion, ginger, green chilli and garlic. Sauté it till tender, add ivy gourd and turmeric powder , stir till sautéed with salt to taste.</div><div class="separator" style="clear: both; text-align: center;">Break in the eggs and salt to taste and stir fry. </div><div class="separator" style="clear: both; text-align: center;">When done, in low flame add the cooked rice and combine well with care for not breaking the rice.</div><div class="separator" style="clear: both; text-align: center;">Dish is done ✅ </div><div class="separator" style="clear: both; Slice it thinly, rub it with lime juice and salt to taste. Keep for 10 minutes. Curry leaves 2-3 sprigs. Tomato 2, sliced. Kashmir chilli powder 2 tsp., coriander powder 1 tsp., fenugreek powder 1/4 tsp., turmeric powder 1/4 tsp.</p><p>In the balance prawn fried oil, add curry leaves, followed by onion, ginger and garlic, sauté till tender. Add green chilli, sauté it and add the masala powders and salt. Add sliced tomatoes and allow to cook well. Masala is ready.</p><p>Rice preparation </p><p>Basmati rice 3 cups. Cook the rice in 7 cups of water.</p><p>Add turmeric powder and salt to taste while cooking. Don’t over cook the rice. Run a fork along the cooked rice and spread.</p><p>In to the masala pan, in low flame, add the prawns and combine well, followed by adding the rice, again combine well. Dish is done ✅ </p><p>For coconut chutney, grated coconut, red chilli powder, tamarind, shallots 2, ginger a small piece, salt to taste and curry leaves 2-4 numbers. Grind the ingredients semi coarsely in a mixi, chutney is ready!</p><p>Prawns Biriyani ready! text-align: center;">We use to add a tbsp or two soaked sago balls in payasam/ pradhaman. The crystal like texture in the payasam gives me a special thrill to have it. </div><div class="separator" style="clear: both; text-align: center;">After the marriage of my daughter, got new recipe of sago balls from her ‘Mil’. That were sago balls upma and sago balls patties.</div><div class="separator" style="clear: both; text-align: center;">That too I love. </div><div class="separator" style="clear: both; text-align: center;">In USA 🇺🇸 we had a buffet lunch in a Chinese restaurant where I found sago balls milk drink with sugar. It was so nice to feel the bubbly feel in the mouth. With the special new taste, back home I improvised the recipe into sago balls palpayasam and sago balls pradhaman.</div><div class="separator" style="clear: both; text-align: center;">Here I am introducing sago balls pradhaman!</div><div class="separator" style="clear: both; text-align: center;">Ingredients </div><div class="separator" style="clear: both; text-align: center;">Sago balls 1 cup, wash it and soak in 2 cups of water for 2-3 hours.</div><div class="separator" style="clear: both; text-align: center;">Grated jaggery 2 cups,</div><div class="separator" style="clear: both; text-align: center;">Coconut milk 4 cups,</div><div class="separator" style="clear: both; text-align: center;">Coconut bits 2 tbsp.,</div><div class="separator" style="clear: both; text-align: center;">Cashew bits 2 tbsp.,</div><div class="separator" style="clear: both; text-align: center;">Raisins 2 tbsp.,</div><div class="separator" style="clear: both; text-align: center;">Salt a pinch,</div><div class="separator" style="clear: both; text-align: center;">Ghee 3 tbsp.</div><div class="separator" style="clear: both; text-align: center;">Cook the sago balls in two cups of coconut milk.</div><div class="separator" style="clear: both; text-align: center;">Heat the jaggery in 1/4 cup of water and add into the cooked sago balls. Combine well, when starts bubbling, bring the flame to medium low. Stir occasionally. Fry the coconut, cashews and raisins separately. Keep aside. Add the balance ghee and coconut milk into the sago balls mix and add the salt. When it comes to a semi thick consistency, off the flame 🔥 and add the fried items into it. Kadai Carrot Chicken! I love dry dishes. It can be served as starters and mid meal. Chicken legs and wings are preferred for this dish. Marinate with ginger garlic paste, salt to taste, kashmiri chilli powder, a pinch of black pepper and fennel powders. Keep aside for an hour. Shallow fry it in coconut oil. In the balance oil, sauté onion, carrot slices along with green chilli. When done, off the flame and place the fried chicken pieces over the carrot, sprinkle with chopped cilantro. The delicious dish is ready. Combine well, add warm water 1/4 cup, combine well. In low flame start cooking the mix with continuous stirring. When the mix starts thickening take it out of the stove, add the mango purée, combine well with thorough stirring. Allow to cool.</p><p>Decorating the cake </p><p>From the kadai transfer the cake into a plate. Keep the cake with top side up. Pour the mango glaze on the top of the cake, allow the glaze to drip all around the sides of the cake. It’s done ✅ </p><p>Refrigerate for 1-2 hours. We are happy!</div><div class="separator" style="clear: both; text-align: center;">Thank God for the blessings showered upon us!</div><div class="separator" style="clear: both; text-align: center;">Recipe </div><div class="separator" style="clear: both; text-align: center;">Dry ingredients </div><div class="separator" style="clear: both; text-align: center;">Sooji flour (atta) 1 cup,</div><div class="separator" style="clear: both; text-align: center;">Powdered sugar 3/4 cup,</div><div class="separator" style="clear: both; text-align: center;">Baking powder 1 tsp.,</div><div class="separator" style="clear: both; text-align: center;">Baking soda 1/3?tsp.,</div><div class="separator" style="clear: both; text-align: center;">Salt 1/4 tsp.</div><div class="separator" style="clear: both; text-align: center;">Put the ingredients in a bowl combine well finely.</div><div class="separator" style="clear: both; text-align: center;">Wet ingredients </div><div class="separator" style="clear: both; text-align: center;">Mango 1, peeled, cut and pureed,</div><div class="separator" style="clear: both; text-align: center;">Coconut oil 1/3 cup,</div><div class="separator" style="clear: both; text-align: center;">Warm milk 1cup,</div><div class="separator" style="clear: both; text-align: center;">Vanilla essence 1 tsp.</div><div class="separator" style="clear: both; text-align: center;">Put the wet ingredients together, combine well, add the dry ingredients into it, and whisk it thoroughly on one direction. Whisk until the ingredients are blended together into a semi solid consistency to pour into the cake pan. </div><div class="separator" style="clear: both; text-align: center;">Take the cake pan, brush with ghee the inside. Drop in 1-2 tsp. atta inside and tap it to spread inside. If any excess flour take it out.</div><div class="separator" style="clear: both; text-align: center;">Pour the cake mix into the cake pan, tap it 3-4 times and allow to stay for 15 minutes.</div><div class="separator" style="clear: both; text-align: center;">Take a shallow kadai, preheat it for 10 minutes, lower the flame and transfer the cake pan inside the kadai. It’s Covid 19 second wave time. As seniors we have to take utmost care. So thought of making a healthy cake with the available ingredients in my pantry. Thus this soft and delicious cake born.</div><div class="separator" style="clear: both; text-align: center;">Ingredients </div><div class="separator" style="clear: both; text-align: center;">Wet ingredients </div><div class="separator" style="clear: both; text-align: center;">Coconut oil 1/4 cup, ghee 1/4 cup, sugar 2/3 cup, warm milk 1 cup, vanilla essence 1 tsp.</div><div class="separator" style="clear: both; text-align: center;">Mix and whisk the ingredients in one direction thoroughly. </div><div class="separator" style="clear: both; text-align: center;">Dry ingredients </div><div class="separator" style="clear: both; text-align: center;">Wheat flour 1/1/2 cups, salt a pinch, baking powder 1 tsp., baking soda 1/3 tsp. Sieve it into the wet ingredients, whisk it in one direction to smooth batter without any lumps. Add a tbsp. of lime juice, few raisins and broken cashew nuts into the cake mix and whisk again.</div><div class="separator" style="clear: both; text-align: center;">By the time preheat your kadai in high flame for 5 minutes.</div><div class="separator" style="clear: both; text-align: center;">Take the cake pan, brush with ghee, sprinkle wheat flour, , get it dusted inside, if extra remove it. Pour the cake batter into the cake pan. Pat it 3-4 times to level the surface. Place it in the kadai. Cook it in low flame for 40-50 minutes. Sprinkle raisins and nut as you like after 20 minutes. After 40 minutes run a tooth pick and see whether the cake is done. The tooth pick will come out clean when it is done. Take the cake pan out, allow to cool down. Take a plate, upside down the cake. Then place the top up and cut into desirable size. Chop it finely, mix it with the semi coarse dough. Heat coconut oil in a shallow pan, take a small scoop of the dough, form patties, drop into the oil. Deep fry till golden brown. Spread it on tissue paper. Allow 20 minutes to get cooked. Stir it and add cold water, strain and again add cold water to avoid sticking together. The bun is prepared from wheat flour, sugar, yeast, salt and warm milk. Add a tsp of yeast , 2 tbsp of sugar in the warm milk, mix well and allow to ferment for 20 minutes.</div><div class="separator" style="clear: both; text-align: center;">Sieve the wheat flour, add salt to taste. Transfer into the fermented mix, prepare a soft dough, knead it flat, roll and knead for 15 minutes. Keep it for 2 hours. Again knead for 15 minutes. I am not having a bread can. So thought of making the family bun. Grabbed the cake can, brushed with butter, and shaped into a hollow circle. Keep it for an hour. Heat 2 tbsp. coconut oil, add the chicken pieces, and fry all the sides. At the finishing point add a handful of chopped onion, garlic and ginger along with silted green chilli, combine well and let it cook and absorb the oil. Love chicken very much. So once in a while I go for this more protein less carb diet. One chapatti and more chicken. The shallow fried chicken can be eaten as a meal.<p></p><p>Preparation </p><p>Chapatti </p><p>Whole wheat flour 1 cup, salt to taste, 1 tbsp. coconut oil, prepare a soft dough adding enough cold water. Keep it for half an hour. Make lemon size balls, spread it on a chapatti presser, and cook both the sides. No need brush with oil or ghee.</p><p>Chicken curry </p><p>Chicken parts 1 kilo, cut into small chunks, legs, wings, thighs are kept for shallow fry. Marinate with ginger garlic paste , salt and chicken masala 1 tbsp. </p><p>Onion 1, green chilli 5, garlic cloves 6, potatoes 2, all sliced, curry leaf a sprig, coconut oil 1 tbsp., coriander leaves little.</p><p>Heat the oil in a shallow pan, add onion and other ingredients , sauté till tender, add the marinated chicken, and allow to cook in medium flame. Add a cup of water, and allow to cook. Combine well. Ready to serve. High protein dish with enough carbs and minerals. Serve with rice or chapati.
