Vegetable biriyani

Basmathi rice 5cups,clove 4,cinnamon stick 3inch pc,pepper corns 10,mace little,
cardamom 2,ghee 2tspn,lemon juice 1tblspn,salt to taste.
Cook rice along with the ingredients,spread on a tray,run a fork,to keep rice seperated.
Cooking oil 1/4cup,baby potatoes 10,cooked,peeled,quartered lengthwise,frozen green
peas 2cups.
Heat half oil in a pan,drop in green peas,sprinkle salt,saute for 3 mins,keep aside.
Add potatoes in the pan,sprinkle salt to taste,saute till light brown,keep it aside.
Ghee 1tblspn,raisins 2 tblspns,croutons 1/2cup.
Tomato 2,sliced,onion 2,sliced,ginger garlic paste11/2tblspn,green chilly 2,sliced,
turmeric powder 3/4tspn,salt to taste,carrot 3,sliced,broccoli 1,flowers seperated,
chilly powder 1tspn,pepper powder 1tspn,coriander powder 1tspn,garam masala 1tspn,
fennel seeds1tspn,star anise 1,curry leaf 1sprig,cilantro finely chopped 1/4cup,cilantro
little to garnish.
Heat oil in a wok,drop in star anise,fennel seeds,when aroma spreads,add curry leaf,
onion,saute till translucent,add ginger garlic paste,finely chopped cilantro,stir well,add green chilly,tomato,saute till cooked,add curry powders,salt,stir till the mix is blended,add
vegetables,combine well and cookin low flame till the veggies are tender.
Combine well rice,vegetable masala,potato and greenpeas,in a large tray,garnish with cilantro.
Heat ghee,drop in raisins,fry till golden brown,pour the mix over biriyani ,spread
it,garnish with croutons and serve.
