Sweet potatoes are rich in vitamins and minerals. The great source of fibre is good for gut health. The vitamin A helps in glowing skin, healthy hair and good for eyes and vitamin C especially good in curing cold and flu. It is anti inflammatory, anti microbial and the beta carotene in it helps manage cancer. Good for digestion. Regulates blood pressure and enhances immunity. It is a superb food. Let’s have it with a dash of spice in it.
Sweet potato masala for dinner.
Healthy and delicious.
Sweet potato 700 g, peeled and cubed, boil cooked,
Onion 1, sliced,
Garlic cloves 6, ginger 1 inch piece, both chopped,
Tomato 1, cubed, remove seeds,
Green chilli 3, silted,
Cilantro chopped 1 tbsp.,
Coconut oil 1 tbsp.,
Mustard seeds 1/4 tsp.,
Urd dal splits 1 tbsp.,
Dried red chilli 1, broken,
Turmeric powder 1/3 tsp.,
Salt to taste.
Heat oil in a shallow wok, drop in mustard seeds and urd dal splits , allow to crackle, drop in red chilli, followed by onion, salt, ginger and garlic , sauté till tender, add, green chilli, tomato and turmeric powder. Stir till stewed. Add cooked sweet potato, carefully mix or pop it up and down to get mixed with the masala. Finally add the chopped cilantro and combine. Serve hot with rice or chapatti. We had its alone for dinner. Awesome 😎
