Brinjal theeyal.( Egg plant)

Brinjal cut into small pieces 2 cups
Onion slices 1/2 cup
Green chilly sliced 2
Cooking oil 1 tbsp.
Mustard seeds 1/2 tsp., dried chilly 1
salt, curry leaves as required
Theeyal mix 4-5 tbsp.. ( refer konju theeyal for theeyal mix)
 Heat oil in a pan, drop in dried chilly ,mustard seeds, when pops completely add half curry leaves
followed by onion, sauté till translucent ,add brinjal, salt and green chilly, sauté well till almost cooked.
Mix theeyal koottu in enough water, add and let it boil and cook well in low flame. Garnish with
curry leaves.
