Idiyappam

Fine appam rice flour 3 cups,
Boiling water 3 cups,
Ghee 1tspn,salt to taste.
Mix flour,ghee,salt ,add boiling water,quickly mix it well with a steel ladle.
Allow to cool.Knead the mix to form a soft dough.The dough should not stick on hand.
It should roll freely.
Grated coconut 2cups
Fill idiyappam press with dough.
Brush oil on idiyappa stand.Put 1 tspn grated coconut on each idiyappa space.
Press dough on each idiyappa space.Stack the racks of the stand with idiyappam.
(Here idli cooker and stand is used to make idiyappam)
Steam cook for 6 to 9 minutes.
Very good dish for dinner.Goes well with egg roast /ishtoo /mutton stew.
