Egg 4,boiled and peeled,give 2-3 cuts.
Marinate the eggs with a mixture of 1 tblspn lemon juice,1/2tspn pepper powder,1/4tspn turmeric powder,cilantro paste 2tspn and salt to taste,for 1 hr.
Heat 1/2tblspn oil,simmer flame,drop in eggs and few curry leaves,turn it around till the skin
becomes light brown.
Biriyani rice 2 cups,cooked in 4 cups water,run a fork along to seperate rice,allow to cool.
Onion 1,sliced thinly,ginger garlic paste 1tblspn,green chilly 2,slited,
Cooking oil 1tblspn,cinnamon 2inch,cardamom 1,cloves 3,star anise 1,
Turmeric powder 1/4tspn,chilly powder 1/2tspn,coriander powder1/2tspn,pepper powder 1tspn,
Yogurt 1/2cup
Mint 1/4handful,curry leaf 1sprig,cilantro to garnish
Heat oil in a shallow pan,drop in spices one by one,stir till aroma spreads,drop in onoin,saute
till translucent,add ginger garlic paste,saute,add green chilly,curry leaf,mix well,simmer flame,
add curry powders,stir till raw smell vanish,add mint, yogurt,mix well,adjust salt,add rice,combine well,
garnish with roasted eggs and cilantro.
