Ivy Gourd egg fried rice

We planned a trip! Thought to have take away lunch from home. Decided to cook rice with the leftover veggies and eggs. 
Basmati rice 1 cup, cooked in 21/2 cups of water with salt to taste, transfer the cooked rice into a wide bowl, run a fork through it and allow to cool down.
Ivy gourd two handfuls, washed and sliced thinly,
Onion 1, garlic cloves 7, ginger 2 inch piece, green chilli 4, all thinly sliced,
Eggs 2, butter 25 g,
Salt to taste and curry leaf 3 sprigs.
Turmeric powder 1/2 tsp.
Heat the butter in a shallow pan, drop in curry leaves, followed by onion, ginger, green chilli  and garlic. Sauté it till tender, add ivy gourd and turmeric powder , stir till sautéed with salt to taste.
Break in the eggs and salt to taste and stir fry. 
When done, in low flame add the cooked rice and combine well with care for not breaking the rice.
Dish is done ✅ 
I had ginger curry with me, super combination for the rice.
Delicious, nutritious and above all so happy to cook it with the available ingredients.

Special dinner with Black Pearl Spot


 Broken wheat Pancake (നുറുക്ക് ഗോതമ്പ് പാലപ്പം)
നുറുക്ക് ഗോതമ്പ് 2 കപ്പ്, കഴുകി 3 മണിക്കൂർ കുതിർത്ത്, പുളിപ്പിച്ച നാളീകേരവെള്ളം, 1/2 കപ്പ് നാളീകേരം ചേർത്ത് മിക്സിയിൽ അരച്ച് വയ്ക്കുക. നാല് മണിക്കൂർ ശേഷം പാകത്തിന് ഉപ്പ് ചേർത്ത് അപ്പച്ചട്ടി ചൂടാക്കി ഓരോ തവി മാവ് ഒഴിച്ച് ചട്ടി ചുറ്റിച്ച് അടച്ച് വച്ച് ചുട്ടെടുക്കാം.
കരിമീൻ വറുക്കാൻ
കരിമീൻ ചെത്തി വൃത്തിയാക്കി, ഉപ്പും വാളൻപുളിയും ചേർത്ത് കഴുകി, വെള്ളം വാലാൻ വയ്ക്കുക. തുടർന്ന്, മുളക്പൊടി, കുരുമുളക് പൊടി, മല്ലിപ്പൊടി, വെളുത്തുള്ളി ഇഞ്ചിപേസ്റ്റ്, നാരംഗാനീര്, പാകത്തിന് ഉപ്പ് ചേർത്ത് ചാലിച്ച് മീനിൽ പുരട്ടി 2 മണിക്കൂർ വച്ചശേഷം ഒരു നോൺസ്റ്റിക്ക് പാനിൽ കുറച്ച് വെളിച്ചെണ്ണ ഒഴിച്ച് ഇരുപുറവും പൊരിച്ചെടുക്കുക.
മസാല തയ്യാറാക്കാൻ
സവാള, പച്ചമുളക്, കറിവേപ്പില ആവശ്യത്തിന് മീൻ വറുത്ത പാനിൽ പാകത്തിന് ഉപ്പ് ചേർത്ത് വാട്ടിയെടുക്കുക.
മേമ്പൊടിക്ക് ചില്ലി & സോയസോസ് (optional)
അത്താഴത്തിനാണ് തയ്യാറാക്കിയത്. സൂപ്പറായി!!!

Tasty Prawns Biriyani with Coconut chutney


 Medium large prawns 🍤 500 grams, peeled & cleaned,

Marinate the prawns and keep for half an hour.

How to marinate?

Lime juice 2tbsp, ginger garlic paste 1 tbsp., red chilli powder 2 tsp., salt to taste, pepper powder 1/2 tsp., mix the ingredients together and combine well with the prawns 🍤 

In a pan, shallow fry the prawns and keep aside.

Biriyani masala preparation 

Onion 2, ginger 2 inch piece, garlic 2 bulbs, green chilli 4. Slice it thinly, rub it with lime juice and salt to taste. Keep for 10 minutes. Curry leaves 2-3 sprigs. Tomato 2, sliced. Kashmir chilli powder 2 tsp., coriander powder 1 tsp., fenugreek powder 1/4 tsp., turmeric powder 1/4 tsp.

In the balance prawn fried oil, add curry leaves, followed by onion, ginger and garlic, sauté till tender. Add green chilli, sauté it and add the masala powders and salt. Add sliced tomatoes and allow to cook well. Masala is ready.

Rice preparation 

Basmati rice 3 cups. Cook the rice in 7 cups of water.

Add turmeric powder and salt to taste while cooking. Don’t over cook the rice. Run a fork along the cooked rice and spread.

In to the masala pan, in low flame, add the prawns and combine well, followed by adding the rice, again combine well. Dish is done ✅ 

For coconut chutney, grated coconut, red chilli powder, tamarind, shallots 2, ginger a small piece, salt to taste and curry leaves 2-4 numbers. Grind the ingredients semi coarsely in a mixi, chutney is ready!

Prawns Biriyani ready! Serve with coconut chutney!

ഓണസദ്യ ശ്രേയസ്സിൽ

ഓണത്തിന് സദ്യ ഒഴിച്ചുകൂടാനാവില്ല. മലയാളികളുടെ ദേശീയോത്സവമാണ് ഓണം. തിരുവോണത്തിന് സദ്യ ഗംഭീരമാണ്!
കോവിഡ് കാലം. വരാനാരുമില്ല, പോകാനും നിയന്ത്രണം. രണ്ട് പേരെ ഉള്ളു. എന്നാലും സദ്യക്ക് സദ്യ തന്നെ വേണ്ടേ. 
ഇതാ ഒരു ലളിത സദ്യ. 
പരിപ്പ്, നെയ്യ് , പപ്പടം,  സാമ്പാർ, കാളൻ, പച്ചടി, അവിയൽ, കൂട്ടുകറി, തോരൻ, മെഴുക്ക്പുരട്ടി, ഇഞ്ചി, നാരംഗ, മാംഗകൂട്ടാൻ, ശർക്കരപുരട്ടി, ചക്കക്കുരു പ്രഥമൻ, ചൗവ്വരി പാൽപായസം എന്നിവയും കൂടി തയ്യാറാക്കി, ചെമ്പാവരി ചോറിനോടൊപ്പം വേറിട്ട ഒരു സദ്യ വീട്ടിലെ വാഴ ഇലയിൽ വിളമ്പി 😇 2021 ലെ തിരുവോണസദ്യ കേമമായി🎉

Sago balls ( sabudana/ചൗവ്വരി) Pradhaman

It’s delicious 😋 

This recipe is the first time in my life.
I always had a passion for sago balls.
We use to add a tbsp or two soaked sago balls in payasam/ pradhaman. The crystal like texture in the payasam gives me a special thrill to have it. 
After the marriage of my daughter, got new recipe of sago balls from her ‘Mil’. That were sago balls upma and sago balls patties.
That too I love. 
In USA 🇺🇸 we had a buffet lunch in a Chinese restaurant where I found sago balls milk drink with sugar. It was so nice to feel the bubbly feel in the mouth. With the special new taste, back home I improvised the recipe into sago balls palpayasam and sago balls pradhaman.
Here I am introducing sago balls pradhaman!
Ingredients 
Sago balls 1 cup, wash it and soak in 2 cups of water for 2-3 hours.
Grated jaggery 2 cups,
Coconut milk 4 cups,
Coconut bits 2 tbsp.,
Cashew bits 2 tbsp.,
Raisins 2 tbsp.,
Salt a pinch,
Ghee 3 tbsp.
Cook the sago balls in two cups of coconut milk.
Heat the jaggery in 1/4 cup of water and add into the cooked sago balls. Combine well, when starts bubbling, bring the flame to medium low. Stir occasionally. Fry the coconut, cashews and raisins separately. Keep aside. Add the balance ghee and coconut milk into the sago balls mix and add the salt. When it comes to a semi thick consistency, off the flame 🔥 and add the fried items into it. Pradhaman is ready to serve.

A homely lunch with a touch of mixed flavour ice creams and dry fruits richness!!!
 In this pandemic situation we are really locked down from attending marriages or any functions outdoors!So what? We have to turn towards the possibilities in front of us, approach with a positive attitude and go ahead!

No worries everything will come on our way!

The activities in our homestead is a great way to stay healthy and happy!

Our daily yoga routine is keeping us positive with enhanced immunity!

Then what to worry and hesitate? Go for your favourite dishes for lunch and enjoy ice cream if you’re craving for it 😄

Grandma’s lunch idea

Enjoying the nostalgic taste of my childhood with a special touch of me in my grandma phase.The veggies are from our homestead garden. 
Lunch is served in our traditional serving plate.
1. Rice 
2. Dal & ridge gourd coconut curry 
3. Anchovy mango coconut curry 
4. Banana pseudostem greengram sprouts coconut stir fry 
5. Anchovy moringa leaves stir fry 
6. Sweet lime pickles 
WoW 😮 the taste is superb 👌
It is highly nutritious 👌
Once you had it, you will surely wait for grandma’s delicacies 😊

Happy lunch @ Home

Being Saturday it’s lockdown!
A rainy day!
On rainy days we feel more hungry!!
Looked into my pantry and refrigerator!!!
Menu ready for lunch.
Got  ready and started.
We keralites prefer rice for lunch.
So as usual rice, that too red bold rice.
Then comes the side dishes one by one.
1. Dal curry 
2. Little gourd bitter gourd stir fry 
3. Clam roast with grated coconut 
4. Moringa leaves and beetroot stir fry 
5. Beetroot sautéed with ginger, shallots, green chilli and garlic in yogurt and 
6. Curd 
When we look into it, it is a fully balanced diet with carbs, protein, vitamins, minerals, fibre and probiotics!!!

Kadai Carrot Chicken

A new dish in my kitchen! Kadai Carrot Chicken! I love dry dishes. It can be served as starters and mid meal. Chicken legs and wings are preferred for this dish. Marinate with ginger garlic paste, salt to taste, kashmiri chilli powder, a pinch of black pepper and fennel powders. Keep aside for an hour. Shallow fry it in coconut oil. In the balance oil, sauté onion, carrot slices along with green chilli. When done, off the flame and place the fried chicken pieces over the carrot, sprinkle with chopped cilantro. The delicious dish is ready. Can serve with bread, chapatti and roti.
Today I served the chicken with potato rice, yogurt and lemon pickle.
Recipe for potato rice 
Basmati rice 1 cup,
Salt to taste, wash the rice and pressure cook in 2 cups of water. Add photo tiny cubes with the rice while cooking it. When cooked, off the flame, allow to cool down, open the cooker, run a fork to separate the rice. Heat little butter, add green chilli circles, sauté it, add the cooked potato rice and add chopped cilantro.
Delicious and nutritious !

Mango Sooji cake with mango glaze



Preparation of mango glaze 

In a bowl, add the corn flour, salt and powdered sugar together. Combine well, add warm water 1/4 cup, combine well. In low flame start cooking the mix with continuous stirring. When the mix starts thickening take it out of the stove, add the mango purée, combine well with thorough stirring. Allow to cool.

Decorating the cake 

From the kadai transfer the cake into a plate. Keep the cake with top side up. Pour the mango glaze on the top of the cake, allow the glaze to drip all around the sides of the cake. It’s done ✅ 

Refrigerate for 1-2 hours. Take it out, cut into desirable size and enjoy your delicious mango glaze cake 🧁 




Today our wedding anniversary ❤️
Thought of making a cake 🎂 
I learned making kadai cakes last year and it became part of lockdown cooking.
Got some ripen mangoes in the pantry and went fo Mango cake.
Then for decoration just went to pour mango glaze over the soft cake. Came out well. We are happy!
Thank God for the blessings showered upon us!
Recipe 
Dry ingredients 
Sooji flour (atta) 1 cup,
Powdered sugar 3/4 cup,
Baking powder 1 tsp.,
Baking soda 1/3?tsp.,
Salt 1/4 tsp.
Put the ingredients in a bowl combine well finely.
Wet ingredients 
Mango 1, peeled, cut and pureed,
Coconut oil 1/3 cup,
Warm milk 1cup,
Vanilla essence 1 tsp.
Put the wet ingredients together, combine well, add the dry ingredients into it, and whisk it thoroughly on one direction. Whisk until the ingredients are blended together into a semi solid consistency to pour into the cake pan. 
Take the cake pan, brush with ghee the inside. Drop in 1-2 tsp. atta inside and tap it to spread inside. If any excess flour take it out.
Pour the cake mix into the cake pan, tap it 3-4 times and allow to stay for 15 minutes.
Take a shallow kadai, preheat it for 10 minutes, lower the flame and transfer the cake pan inside the kadai. Allow to remain for 40-45 minutes on low flame. Take a tooth pick and check whether cooked. If the toothpick comes out clean, the cake is done.
Remove the cake pan from the kadai and allow to cool.
Mango glaze preparation 
Ingredients 
Corn flour 1 tbsp.,
Mango purée 1/4 cup,
Powdered sugar 3 tbsp.,
Salt a pinch.

Atta sponge cake 🎂

Birthday cake in Suma’s kitchen. It’s Covid 19 second wave time. As seniors we have to take utmost care. So thought of making a healthy cake with the available ingredients in my pantry. Thus this soft and delicious cake born.
Ingredients 
Wet ingredients 
Coconut oil 1/4 cup, ghee 1/4 cup, sugar 2/3 cup, warm milk 1 cup, vanilla essence 1 tsp.
Mix and whisk the ingredients in one direction thoroughly. 
Dry ingredients 
Wheat flour 1/1/2 cups, salt a pinch, baking powder 1 tsp., baking soda 1/3 tsp. Sieve it into the wet ingredients, whisk it in one direction to smooth batter without any lumps. Add a tbsp. of lime juice, few raisins and broken cashew nuts into the cake mix and whisk again.
By the time preheat your kadai in high flame for 5 minutes.
Take the cake pan, brush with ghee, sprinkle wheat flour, , get it dusted inside, if extra remove it. Pour the cake batter into the cake pan. Pat it 3-4 times to level the surface. Place it in the kadai. Cook it in low flame for 40-50 minutes. Sprinkle raisins and nut as you like after 20 minutes. After 40 minutes run a tooth pick and see whether the cake is done. The tooth pick will come out clean when it is done. Take the cake pan out, allow to cool down. Take a plate, upside down the cake. Then place the top up and cut into desirable size. Enjoy your cake 🎂

Kadala vada ( Bengal gram patties)


When we think about vada, usually we go for ‘parippu vada’( toordal patties). 
I tried Bengal gram patties just like toordal patties and it came out good.
Instead of parippu vada this one is kadala vada. Delicious and crispy snack!
Preparation 
Bengal gram 1 cup, soaked overnight, drain out the water and grind it adding salt to taste. Do not add water.
Onion 1, ginger 1 inch piece, green chilli 2, curry leaf 1 sprig. Chop it finely, mix it with the semi coarse dough. Heat coconut oil in a shallow pan, take a small scoop of the dough, form patties, drop into the oil. Deep fry till golden brown. Spread it on tissue paper. Serve hot with tea or coffee ☕️

Ada pradhaman


Super delicious 😋 
Ready made rice ada 200 gym!
Coconut milk thin 1 litre and thick 1/2 litre!
Jaggery 500 gm, make it syrup in a glass of water!
Ghee roasted cashew nuts, raisins and coconut bits!
Soaked Sago pearls a handful !
Ghee 1 tbsp!
Soak the ada in rolling boiling water for 20 minutes!
Add cold water and stir the cooked ada!
Drain out the water and wash 2 more times!
Cook the ada in the thin milk!
Add the jaggery syrup, cook it in medium flame stirring continuously. When the consistency is semi thick, add the thick milk. Stir well and just allow the mix to warm.
Off the flame, transfer into the serving bowl and garnish with the ghee roasted nuts, raisins and coconut bits!
Delicious ada pradhaman ready to serve 🤩

Delicious & nutritious!!
Loved by all ages!
The ginger, garlic, shallots and green chilli!
The whole spices cinnamon, cloves, star anise, pepper corns, nutmeg mace and fennel seeds!
Biriyani masala with chilli, coriander, turmeric and garam masala!
Biriyani rice, chicken pieces, ghee, salt and cilantro!
Simple to cook in a pressure cooker!
