A dinner special. ‘Amaranth flour dosa with Sambar’.
We are now in USA with our daughter. Found this precious amaranth flour in her pantry. She told me to try it as a substitute of rice flour and make whatever you want.
After making amaranth flour puttu I got inspired to make more dishes with it. It is easily digestible. Whole grain Amaranth flour is rich in protein and dietary fibre. So it’s a great way to enhance the protein in dosa by substituting amaranth flour instead of rice.
Ingredients
Urd dal powder 1 cup,
Amaranth powder 2 cups,
Methi (fenugreek) powder 1 tsp.,
Salt to taste
Mix the ingredients in a bowl add four cups of water, combine together and grind it for two minutes in a mixer grinder. Please add more water if needed to make the batter semi thick for dosa. Keep it for 8 to 10 hours to ferment.
Heat the dosa pan on medium flame. Take a ladle full of batter, pour on the pan and spread it thin and round. Allow to light brown and flip it to cook the other side. Serve hot with Sambar or Chutney.
